Place the first 4 ingredients in a pot and heat to dissolve the sugar. Pour the hot liquid over the shimeji mushrooms. Leave to soak for as long as you like. Remove root/discolored ends of eringi and shimeji. Cut or tear egingi to size that matches shimeji. Seed fresno pepper and julienne. Heat sesame oil, and saute mushrooms on medium heat. When almost done (turns somewhat translucent), add fresno pepper, and stir. Add shiokoji, and mix well.
